I tried LaCroix and I'm not at all impressed. I don't think it has anything to do with essence, it's marketing and conditioning.
Polar flavored seltzers have been a staple in New England for many years. They even experiment with diffrent seasonal flavors.
Carbonated water and artificial flavor. No huge mystery.
Lots of sugar
