Expecting the govt to subsidize the low wages restaurants pay to skilled food service workers was a scam that had to end eventually.

The service industry is a horribly broken thing that has limped along on subsidized wages for decades.

Generally speaking, smaller owner operated really can't afford to pay their workers more. Margins on food are razor thin.

The bottom line is that food service industry NEEDS to change. It's a VERY difficult business.

On the one hand its not right for some restaurants to subsidize rest. margins via tips. On the other many rests can't survive without it

The solution, of course, is probably slightly higher prices. But we need a larger middle class with disposable income first.

Higher min wage is necessary, but it only benefits economy if the middle class expands as a result.

Wages have not kept up with inflation. Had that been the case, the minimum wage would have reached $21.72 an hour by 2012.
