        It’s not impossible to eat grain-free & gluten free if you do your own shopping & cooking. Grains are inflammatory for most ppl & wheat/grains are in 95% of processed food. “Gluten free” food today = fat free of 90s. Better to cook real food

        Gluten free in not a fad. Celiac disease had to do with an immune response to gluten particles entering the intestinal wall via weak tight junctions. Don't confuse real disease with trends.

        💯agree regarding celiac disease & a huge increase in gluten sensitivity among the population. The food we eat matters to our health- and very seriously to those with celiac disease.

        Increase in incidence is hard to prove since we only recently gained the ability to detect the disease. While inflammatory conditions are on the rise, grains have been consumed for 10k years. However, excess sugar, general obesity, and sedentary lifestyles are relatively new.

        All true. Wheat was hybridized for the World Hunger Project. 18 inch stalks vs 36. But effects on human digestive systems were not considered. The food we eat is not the same as in the 50s. This is a factor, along with what you cited.

        Not saying it isn't possible, but humans have been hybridizing and artificially selecting in agriculture for most of human history. The 50s isn't a good time to idealize diet. Stomach cancers were off the charts, as well as many other cholestatic disease from excess fat.
