Quinoa, korean miyeok, green onion, water chestnuts, mandarin oranges, baby corn, enokitake, cremini, and bok choy. What would be the perfect dressing?

Ummmm a garlic sauce might be too heavy for this (but would absolutely smack) so I would say maybe a Thai peanut dressing?
I am way out of my level of expertise because sadly I am not sure what a few of these things are so I trust @NUGZZZZZ! Would an oil&vinegar like balsamic go with it or is it too many profiles in one bite ?

Balsamic was my first thought, but I'm not knowledgeable about these kinds of things so I only know a handful of dressings
