They have the option to do so (one of the reasons they changed "Do Not Disturb" signs to "Room Occupied" and similar wording), but that's security, not housekeeping.

I’ve been at Bellagio since Friday and have had service every day (so far). The place I sometimes stay in Stockholm, Sweden does this, though they frame it as an environmental thing (obvious bullshit, it’s cost saving). Yavapai Lodge at the Grand Canyon does it too.
