I want to get into different fighting games outsides of smash, but I have no idea where to start. I'm thinking of either trying out Pokken or Under Night In-Birth, any suggestions as for what else I should try?

Skullgirls is great for just learning about fighters in general. Basically a tutorial for another game you might be interested in.
