Making beef stew today with onions, garlic, carrots, celery, potatoes and leek, gotta simmer this guy for 1.5-2hours and we feasting

You could easily make that simmer for 5-6 hours and really low heat, just make sure there's enough water in there and make it taste of a lot more but sounds really amazing

if i had bones i would've definitely let it keep simmering, but its fine if its just meat imo
