Every remote job ever: "Please spend the next two weeks reading hundreds of pages of documentation and how-tos. If you for whatever implausible & completely unnatural reason will need to review them later, do so outside work hours."

My experience has been the complete opposite. Not once have I been told or hinted to work outside of work hours.
That's pure avarice on your employer's part. Reading and writing documentation is an essential task for most tech-related jobs.

Needless to say, I'm NDA'd quite heavily - but if you heard the name of the client, you'd need no further explanation wrt the documentation (which is heavily client-side, me being a subcontractor of a subcontractor).
