Because all I see in it is tech-enabled subversion of systems put in place to protect workers, and the return of older forms of exploitation

This is perhaps unfair. There's maybe something good about being able to find work in your own field from anywhere worldwide.

I think the minimum wage is a terrible system ("we will pay you at least this many pennies") which does fuckall for ordinary people...
