Reading Seeing Like A State so that I can emotionally accept that the bureaucratic machine eating away ever more chunks of reality is as old as humanity itself, and learn to channel my energy working around it instead of resisting it with full force.

Is it? Humanity seems to have had a rather long pre-state existence.

It all works pretty well until your society or organization falls below the Dunbar’s number. Anything more than this, and layers of abstraction become necessary.

This is true.
I'm not saying states aren't an endemic scaling problem. More that we seemed to once have been below the prerequisite population density.
