All the songs I like to sing quite high-pitched, yet my voice is the darkest shade of bass-baritone to exist before you hit bass.

I have a similar issue (bass baritone here too).
Sometimes I just lower the octave of the high pitch song, but it's not the same.

i absolutely love the sound of a tenor/alto/soprano part shifted down an octave in a bass/baritone, it's one of my favorite things and I really wish those voices were more common in popular music

Glad you derive enjoyment from it.
My second problem is that it's been almost a decade since I practiced singing regularly, so I can't even get my own register right.
