Is there any pants fabric that competes with denim for keeping your legs warm in winter? Do they make thick, wool breeches or something, maybe?

Wool.
Wool jeans and sweat pants are popular in Norway in the winter. As well as undergarments that cover all the way down to your (woolen) socks.

Makes sense. I always only buy wool coats and it's basically the plate mail of protecting against cold. My upper half is just immune.

Yup. It beats pretty much everything else, long as you don't get it too wet...

Right. And it's pretty waterproof, excepting really hard rain or snow melting on it over a long period.
