honestly asking for knowledge because there is no proof. Also, can someone win 2 Best of 5 against someone 1000+ MMR higher than they are?

at pro level I seriously doubt it, unless the pro is throwing hardcore. Although, in my WCS Qualifiers I beat a guy 1k mmr above me by doing 2 proxy gates inside his main on g1 and g3 of our series (I'm not a pro, more to pro-blematic).
