Is there a way to see the realtime views on a video outside of the 48 hour default it gives you?
(as in, a page where it shows the realtime and views prior to the 48 hours totalled together?)

You can use the Realtime report to see estimated views data for the last 25 published videos. Here's more info on how to view your Realtime report: https://goo.gl/BxTSGi . Hope this helps.

That only shows for the last 48 hours doesn't it? My scenario is I have a video that after a few days is suddenly gaining traction but I can't see the total views on it via that method

In the normal analytics, you can see the total number of views for each day, but there's not a way to the breakdown of the views by hour.
