As with most security, “hard” (not impossible) is good enough. A proof would imply we found an impossible to reverse one-way function.

"hard" is what is not proven. We think we have such functions and use them. but it's possible there is actually a (computationally) easy way to reverse them that we just don't know yet. Even worse such functions might not even exist.

And I wouldn't call them one way functions, they're usually referred to as factorable functions, like exponential functions dealing with sums and products.
