Lotta people are nervous to even try a big turkey. Worried about drying it out. Not me. I was the default "classic American holiday chef" at most dining rooms in my career. I always buy the biggest damn bird I can afford for Thanksgiving at my house. Still not a lot of leftovers.

Years ago on the day before Thanksgiving, my then-roommate was sick and I had come down with it. Morale was low and nobody felt like cooking, so I went out and bought six frozen turkey dinners; enough for Thanksgiving dinner and two rounds of "leftovers" each.
