It’s less about the game being played & more about the individual video content + its target audience. You know your intended/target audience better than anyone, which is why each creator will tell us (in Studio) when their video is made for kids. More: https://yt.be/help/pE5Q

So, if I make a video that is for all ages, so-called family and (previously) advertiser-friendly and more children choose to watch it than adults, how will that be classified by the "machine learning"?

Not at all. The tweet above from @TeamYoutube specifically mentions that gaming videos are subject to the policy when the link provided does not. There is a great deal of confusion amongst all creators right now.
