You can do this with any 3D software of you choice, llike blender (free), Cinema 4D or 3D studio max (both not free) to name a few.

I use Warcraft Model Viewer to export them as FBX files you can then import to the 3D software: https://wowmodelviewer.net/wordpress/

Would you PLEASE explain how to get the models out and have them still pose-able? The few times I managed to extract anything, they were solid little statues. I literally slapped stone textures on them and said, "Welp. Statue."
