But we could still smell things, and feel the texture. So, like the ghosts in Harry Potter, foods would be decidedly more pungent and varied in mouthfeel.

To be as generous as possible to @stefan__sap there's retronasal smell, which is is basically the chemoreceptors in the nose as effecting your sense of taste.

Not sure where exactly the sensations combine/interact. Taste -> brainstem. Smell -> olfactory bulb -> limbic systems. Maybe they're combined in the thalamus? It's been a while since those classes.
