For every dead language, there was someone who spoke the last sentence of it, and then it was never spoken again.

That’s not the way language works. It evolves.

Latin literally evolved into modern day Spanish, Italian, French etc. Also, Latin is still learnt & spoken, so that doesn’t work either.

Why did Latin evolve into so many languages? Did someone just say “hey, do you guys want to come up with an entire new language?”

Because the civilization crumbled people felt and taught others and then it made love children with other languages

But Latin is considered to be a dead language and you can still say a sentence in it because it's been preserved so well.

Dead language does not mean no one speaks it anymore, it just means new words are not being added to it anymore.
