Why don’t jedis turn off their opponents lightsabers by force pressing the button?

Because they're opponent is force pressing it on

This is also the reason why lightsabers turn themselves off automatically whenever its wielder is killed/incapacitated.

I don't think you HAVE to use the Force to use one, just that you CAN. As long as you keep holding down the activation button, it's useable.

Which is why most non-Force users go for the blaster, I suppose.

Lightsabers would be a game-changer for combat engineers and anti-armor artillery. It's more like a trade secret.
