It's because they're superstitious about saying good luck.

my theatre kid self can’t handle this- they say break a leg because the outer curtains are called legs and they want you to have to do a third bow and “break the legs”

I wanted to say something about the actual reason it's "Break a leg," but I just realized this is correct in two ways goddammit let me use my drama knowledge for something
-
What is the actual reason?
-
The curtains on a stage that are on either stage are called "legs". So, to "break a leg" means to walk on stage. It's used to say "good luck", mostly.

You usually say break a leg to people before they perform, therefore they are already in the cast.

No, because wishing an actor good luck is actually "bad luck". (I took one year of Theater in high school.)
