I wonder if a flatbed scanner would be an easier way to do things, or if the lighting angle would work right.

Ooh, I can answer this! The main issue with using a flatbed scanner is the lack of fine-grained control over focus, which in this case is necessary to get hard enough edges on the segments that they can be somewhat trivially vectorized. :-)
