Is this applicable to a variety of LED displays (Game Boy etc.) or is there some reason you need a bespoke emulator for this game?

The emulation is anything but bespoke: A number of these handhelds were simply a 4-bit microcontroller hooked up to an LCD, with some passive components for buttons and audio. Once the LCD is traced and the ROM contents dumped, it tends to just drop right into MAME.

Here's the machine driver for Sharp SM5xx handhelds, for example - https://github.com/mamedev/mame/blob/master/src/mame/drivers/hh_sm510.cpp … - although the file is large, it's almost entirely just the per-game button mappings and ROM info declarations. At the bottom of the file one can see all the games that share the driver.
