On one hand, Nintendo fans would probably lose their minds if they only knew that I'm actively buying Nintendo Game & Watch handhelds to ostensibly have their circuit boards hacked apart with a saw and then boiled in nitric acid.

Generally, the microcontrollers used by these systems are mask-programmed parts, which means that even if the system itself is non-functional, the bits themselves are usually still good, and can be optically read out with a microscope after depackaging.

Well, this is what these sorts of games look like when running in MAME - https://i.imgur.com/p65ebhD.jpg - creating custom graphics would be as simple as replacing the external backdrop artwork, and authoring a new SVG with its elements tagged appropriately for access by the code.
