Any custom worlds installed? I hit something similar this week while trying to check out the Nvidia RTX museum. Removing it from \AppData\Local\Packages\Microsoft.MinecraftUWP_8wekyb3d8bbwe\LocalState\games\com.mojang\minecraftWorlds\ resolved the issue.
No custom worlds, unfortunately. Just as a safeguard, I even went so far as to delete the entire %AppData%\Local\Packages\Microsoft.MinecraftUWP_[hash] subdir, to no avail.
