Just hit the part of the video regarding drop rates (11:25 right now). This will probably be touched on later in the video, but it occurs to me that both Piglin bartering, Blaze drops (and for that matter all other loot drops) can be trivially modified with data packs nowadays.
I've not watched the video of Dream's run, and I'm not even familiar with the rules pertaining to Minecraft speedruns, but it occurs to me that popping into the Resource Packs menu to prove none are loaded *should* be expected of all runners at the outset of a run.

It wouldn't stop a really dedicated bad actor from carefully splicing in footage from a 'clean' run, and it wouldn't stop someone familiar with code mods from specifically altering the Resource Packs menu to always show an empty list, but it'd be a good start.
