Note that it includes a clip of the game outright bailing, Windows Event Viewer info, confirmation that my Nvidia GPU drivers are up-to-date, and that my Windows install is fully up-to-date. I also installed the Media Pack Extensions already, it's how I played with audio at all.

Not sure if that helps, but I’ve stopped using the official launcher and use multiMC all the time. Haven’t tried recently, tho.
Not to be even more a downer, but it doesn't really, because that whole thing applies to Java Edition, as far as I'm aware.
My first impression is, it's a Java app, it should dump a log file somewhere. It's vague, but that might be your best lead to what's going on.
But given the context, you probably already did that.
