Is there anybody out there with a V-Tech "Jammin' Gym Class" dance mat, a working V. Smile console, and access to a logic analyzer?

nope, but a, "art studio" digitizer tablet, a working http://V.Smile console (or three), and several LA Also 2nd controller port.
Well, the controller emulation is already ironed out. And I've worked out the digitizer tablet protocol once before, I can surely again. But the dance mats are eluding me as to how they communicate with the base console. :(

Don’t they just pretend to be a controller? iirc they plug into the same port

Yes and no, but mainly no. The controller protocol is arbitrary since it's a bidirectional serial link. The ABC button on a normal controller corresponds to Blue-paw on the pad, OK is OK, and the Red button is (I think) the Green-paw, but nothing else seems to map 1:1.
