Protip for anyone recording MAME videos: Use -aviwrite to record raw video, -nosnapbilinear to turn off bilinear scaling, and -snapsize to specify a multiple of the base resolution that is at least 720p. You get nice, crystal-clear graphics even after YouTube's processing.

Nota bene: Being that it's uncompressed 720p video, you will need either a beefy SSD, or the patience to play a given game at roughly 20-30% of full speed. But the end result is something that's actually watchable, and not mangled, macro-blocked hell.
