Hmm. The Lorewalkers on Pandaria aren't a magical discipline. Gnomes studying magic tend to go to Dalaran, so I imagine schools in Gnomeregan focused on the sciences. Schools on Kezan... though if you can call goblin engineering scientific is a different question.

Does Shadowpan monastery count as an institution of learning?
-
Hmmm, that’s another one I didn’t think of! I suppose it depends on how much time is devoted to teaching martial combat and how much is devoted to teaching philosophy

Sure. Just like there's schools that don't teach STEM subjects, but focus exclusively on liberal arts.

Who learns at them? What’s their role in greater Azerothian society? This is the kinda lore we need!

I suspect that most of them would have been in the Eastern Kingdoms since that's where the cities are - but it's also possible that many were destroyed when Stormwind, Loradaeron, and Silvermoon were sacked by the Horde or Scourge. And if so, have they been able to rebuild?
-
Over in Kalimdor, the tauren were nomadic so their knowledge and history would likely be almost entirely passed on verbally.
