This is an interesting thread. I think the delineation between fantasy and soft sci-fi is largely a matter of setting, but the diff between soft and hard sci-fi comes down to audience expectations in regards to describing that setting.

Do I want things to be angels, demons, fae, and magic; or mind-powers, aliens, and technology? Could Sci-Fi and Fantasy rightly be called settings that plots of various sorts are set in? And then the type of plot defines the genre?

That sounds reasonable...It can't be denied that fantasy and sci-fi also have tropes that contribute to readers' expectations of the genres too, but those seem to follow after the division by setting
