Only comment I have: Not 2 big a keto meal. Extended fasts will shrink the stomach, but a big meal can re-stretch it, & you feel wretched even if it was great keto. So maybe moderate, focused keto. Get your vitamins and nutrients. Eggs, beef, cheese, some veg. Steak omelette?

I would suggest a structure but set a goal week to week. Experiment and adapt to your body’s needs and constraints of the week. Setting a very aggresssive fasting schedule over multiple weeks might not be a good recipe
