Once, I tried making steak tendies. Which were like chicken tendies, but with a potato flour breading on thin strips of steak. It tasted amazing, but getting a proper consistency for the breading eluded me.

I slice it before cooking. The colder it is to start, within reason, the easier to do. Sharp knife and proper direction is really important.
