The most efficient way to use holy water would be a blessed moat of it, or dumping buckets of it, on undead trying to scale the walls with ladders, like you would have used boiling tar.

Already got this covered. Need to find a forceful way to clear a path with as much style and cojones as possible.

Holy fire? The old school "greek fire" which was a mixture of Naptha, pitch, sulfur.. Depends on the rules of your universe..

What about beaver pelts full of blessed holy oil followed by rolling balls of Greek Fire. Hmm.

Large barrels full of holy and very flammable oil. There you go, they could be launched via catapult, without them breaking from the launch force.

Barrels make more sense. But a flying cloud of taxidermied beavers of oily death amuses me.

Maybe barrels of oil, rolling Greek Fire, then barrels of holy water to extinguish a path through the flames.
