It'd be difficult, as the water would need to essentially be in some sort of massive water balloon, else it'd just go everywhere. Maybe flaming pitch balls, infused with holy herbs for a AOE type effect?

The most efficient way to use holy water would be a blessed moat of it, or dumping buckets of it, on undead trying to scale the walls with ladders, like you would have used boiling tar.

Holy fire? The old school "greek fire" which was a mixture of Naptha, pitch, sulfur.. Depends on the rules of your universe..
