We laid out tasks to start doing today, keeping journals of recipes, menu ideas, and restaurant themes. We talked about culinary school selection and benefits of school vs self-learning with no certificate or degree. Talked about working at 16 washing dishes to learn food work.

While his peers will be picking their noses and smoking pot, my nephew has a clear plan to be running a kitchen himself in his early 20s and own his own restaurant by age 30. He’s already working this summer to save for his chef’s knives and new cooking tools. At 11 years old.

When was the last time you took an interest in your younger family members? What if someone had taken an interest in you? How much farther along would you be right now? Get in there and be that change for someone else. Grab a kid in your family and show a keen interest.

I do a goal setting activity with each of my students every year. Essentially this. Break it down to three achievable deadlines, identify obstacles and how to overcome them, at least 10 chrono steps and people who can help them. Part of the issue is identifying the right goal

This is what needs to happen for all kids. Not just the mentoring, but they need to see what is coming, what struggles exist, how to overcome them, but also the knowledge that you can change course if you wanna.
