5 cups green cabbage, 1/4 cup cider vinegar, 2 tablespoons oil, 1/2 teaspoon salt. Eat however and with whatever you like. I put mine in wraps or mix it into mashed potatoes, always with protein.

I imagine one could substitute 1/2 t hot sauce for the salt, for more flavor. How about using the vinegar to pickle the cabbage? (a la kimchi or saurkraut) Would that change the nutritional impact?

To get the full fiber effect you want as close to raw as you can tolerate, as far as I understand.

For a bit extra kick I added a Tsp of cayenne pepper to the mix. Tastes pretty good but I think my cabbage to vinegar ratio was a bit off. Still tastes good, I can eat it out of a bowl like coleslaw as a side because I enjoy vinegar.
