Can a devout, intellectually honest Catholic explain to me why they're Catholic and not Protestant Christian?
This isn't a challenge, but an opportunity for me to learn.

One can argue about the “upon this rock” text in the Bible. But once one reads the Church Fathers, the Protestant position gets harder to maintain. Some still do—but it’s certainly harder.

The Orthodox have a much easier case to make than Protestants on episcopacy and the sacraments in general when it comes to squaring the Fathers with their faith.

For me, the Fathers are decisive against Protestantism. Against Orthodoxy, I am inclined to still find Irenaeus compelling—but less so. What convinces me there is that I am only a theist in the first place due to Aquinas—and Palamism is very difficult to reconcile with Thomism.

That is to say, there are Reformed Scholastics, but Orthodox Scholasticism is a nigh self-contradictory idea.

What about conservative protestants who have retained the historic episcopate? (I mean, I realize Roman Catholics think Anglican orders are invalid, but a lot of that is a result of a claim from the Pope which is one of the main issues in dispute.)
