Honestly fresh tomatoes for me, stewed if you don’t have them, sun dried I don’t care for.

Fresh for sure. Sun dried are sweet and would through the tastes off to me. Stewed tomatoes are the debils work.

I dunno, fresh from this particular pizzeria usually entails giant discs of too-thick tomato. Stewed produces a smaller, more manageable dice. I’m actually putting thought into, like, the texture here.
