You can definitely watch netflix sub and then just read up on the changes and if ur extra youtube evangelion ending after one of the episodes to see the difference. The changes aren't that massive tbh
Alternatively pirate the og sub, but yeah. Just don't watch anime subbed as a rule because its almost never even decent and never better than the original

I respectfully disagree. I think that a lot of anime, have dubs that are about as good if not better than the original cast with subtitles. Even if the original cast is a slightly better performance not having to read subtitles can lead to an overall better experience.
