That's true, but don't be discouraged by the number of moves ! Not every character will use 100% of their moves and a lot of them are shared (for example d/f 1, d/f 2 or u/f 4, those moves serve the same purpose for every character), they are called generics

Yep, I agree, but it drastically reduces the time you have to take to learn characters' moves 
When I was learning tekken, I was struggling with that until I started thinking that maybe, if Smash had every single move listed.. It would look like tekken's and that made me relax more about how big the move list it. They just wanna be as informative as possible with everymove

At the end of the day I think there's just a lot of guesswork in Tekken, like even knowing all the animations you don't have time to react to a lot of moves - I'd just say learn to react to the reactables then know how where their strings hit and youll good enuff on defense.
And many, whenever a match isn't going their way, will start to use all those 'useless' moves and strings that aren't so useless when your opponent doesn't know them. If Tekken got rid of some of the bloat it would be so much easier to learn without actually losing anything.
