No offense meant but this is 100% a you problem imo, peach is legit great at preemptively covering jump due to turnip/dair/dtilt and fair. Even reactionary she puts you in a terrible spot cuz of uair. No one can cover jump consistently tho, its just a guess most of the time
I feel like you're trying to "solve" ledgetrapping instead of accepting that its based on a bit of reaction coupled with reads and educated guesses.
In terms of specific options, you didnt do lasting nair to cover jump (only float into land instantly), or dtilted to cover jump/hit people for stalling on edge or to punish ledge gettup or rolls at all. Usmash and fsmash can both on reaction cover options as well if charged.
