Considering the sheer about of corn Americans consume voluntarily, they might not even notice any difference in an Interstellar scenario. The dust storms would suck though.

The premise of Interstellar is false. Even today, just corn grown in the US, if switched to sweet corn, could easily feed all Americans. Additionally, it’s self-pollinating and works well in monoculture.
