Grocery store bread stinks. Not sure what it is, rancid lecithin maybe? I eat a sammich and the smell on my fingers after makes me sick.

loaf pan. Then greasing the loaf pan, then covering the grease with coarse cornmeal because loaf still sticks. Doesn't rise enough

Actually I just hand-form and cook on a pizza stone, no pan.

yeah, I couldn't manage that. The closed-Dutch-oven method works okay but you have to get risen dough into a hot pot w/no deflating
