@eatjoe How do you make it? I have this stupidly labor-intensive method where I melt chocolate and incorporate cream a spoonful at a time.
@St_Rev I made the recipe off the side of a box of Hershey's regular cocoa (undutched). It sucked.
@St_Rev Then I melted chocolate chips in it, and added some half & half and butter, all to taste. Wound up being pretty good.
@St_Rev It's supposed to help to use a little water first, & boiling the cocoa & sugar in that. It breaks the cocoa particles up.
@eatjoe A trick I use with cinnamon (same problem) is to put out a layer of white sugar, sprinkle cinnamon over it, then shake the bowl.
@eatjoe That distributes the hydrophobic cinnamon powder over the hydrophilic sugar granules.
@St_Rev The boiling is more I think for starch or starch-like cocoa granules to suck up water and burst, thereby releasing more flavor.
