Almost zero carb ice cream: tentative success! texture leaves something to be desired, and didn't have any mint extract but pretty good.
@drethelin ...commercial ice cream without a flash freezer and/or a lot of gums & stabilizers, but it's acceptable.

@drethelin Get the fat content too high and it starts to separate out. Straight half-and-half is ideal IMO.
