What are some product categories you're very particular about, enough to have purchased 3+ different versions of the product? Which version did you settle on, and what do you like about it?

Half and half. Publix's version has much better flavor than other brands, and is cheaper than most. Pears. Comice and Taylor's Gold are vastly superior in flavor and texture, Forelle and Seckel are good but tiny, Bartlett will do in a pinch, Anjous are Satan's fruit

Do pear varietals differ in how soft/juicy they are, or is that strictly a function of ripeness?

Any pear will be hard when underripe, mealy when overripe. But there are vast differences in texture and flavor between varieties when correctly ripe.
