Apparently, three days at 129F is a good way to cook beef cheeks. I’m not sure I have the nerve or patience. Also I probably shouldn’t buy beef cheeks.

A long period at a surprisingly low heat pretty much kills everything. But 129F scares me a bit. I think it’s hot enough, but instincts scream NO.
