Even the games where I open project + wild growth I find myself holding off on it until around turn 5. Turns out other people’s decks aren’t awful!

Same. I keep Biology Project but have never played it on turn 1 (even with Growth in hand). It's biggest benefit has been enabling strong mid-game plays earlier while getting me to UI sooner. Sometimes other people's decks are awful, but they still benefit from extra mana.
